Master class from Maresto and Alexander Abramov on August 13!

We are glad to inform you that on August 13, the author’s master class of Alexander Abramov will be held on the territory of the Maresto training center.

Abramov Alex (Abramov Alex) - the career of a cook began more than 20 years ago. Alexander’s track record includes an internship at the White Rabbit restaurant in Moscow, which ranks 13th in the World’s 50 Best Restaurants world ranking. He completed a course in avant-garde culinary at the Basque Culinary Center, and also twice in the United States under the program American beef and SABBIT for restaurateurs.
He holds master classes for both professionals and amateurs. Brand chef in the restaurant Prichal and Lighthouse in Kiev. Alexander is a repeated winner of various national and international culinary contests. Finalist of the television show Master Chef professionals season 8.

Topic: “Lamb on the menu of your restaurant.” Alexander will share new ideas for chefs, reveal the nuances of smoking in a combi oven, demonstrate the possibilities of using a culinary siphon for cooking restaurant dishes, and also share his own secrets of combining different textures on one plate.

1. Cooking Osso - buco with fried young cabbage, onion foam,
buckwheat and chanterelle sauce

2. Preparation of lamb shank, smoked in a combi steamer, with stew of five types of legumes

3. A dish for the company. Shovel baked in shortcrust pastry with sweet paprika,
spinach and aromatic herbs. Smoked sour cream sauce.

4. Seeds of grilled lamb brisket with ginger sauce
and sharp nuts.
