2010 - UNOX begins cooperation with the Department of Materials Physics of the University of Parma on its research path to a new page in social history: the thermal revolution.

Preservation at 70 ° C
The highest temperature is ideal for preserving the properties of fiber-rich vegetables or meat containing a high level of connective tissue; these dishes are not only perfectly preserved, but even improved in terms of organoleptic properties: the hardest connective tissue acquires a soft and gelatinous consistency, as is the case with octopuses, while vegetables become almost creamy. Thus, the preservation program at a temperature of 70 ° C is optimal for cooking dishes with medium or long cooking times.
